Saskatoon Berry Clafoutis

A classic clafoutis is generally made with cherries but it is also made with every type of berry available.

3 cups fresh Saskatoon berries

1/2 cup white sugar

1/4 cup flour

3 large eggs

2 tsp vanilla

2 cups whipping cream (not whipped)

pinch salt

butter for dish

Directions:

1. Preheat oven to 350 degrees.

2. Generously butter a 9 inch Pyrex deep pie plate, cast iron skillet, or similar dish.

3. Scatter berries all over the bottom of the pie plate.

4. I often add a few more berries.

5. Whisk together sugar, flour, eggs, vanilla, and salt.

6. Gradually whisk in cream until well blended.

7. Pour batter over berries. Put enough in that some of the berries are barely sticking out. You may have extra batter (I usually do) so use the rest in a smaller dish with more berries.

8. Pop in the oven and bake until set and top is golden. Start checking at 40 minutes.

If serving hot, add a dab of ice cream.
