 Saskatoon Berry Coffee Cake

cup flour

cup brown sugar, firmly packed

teaspoon cinnamon

cup butter

3/4

cup white sugar

1

large egg

1

cup sour cream

1

teaspoon vanilla extract

cups flour

teaspoon baking powder

1

teaspoon baking soda

1/4

teaspoon salt

1 1/2

cups saskatoons

 

 

Instructions

1. Preheat oven to 350° F.

2. Lightly grease 9" springform baking pan.

3. In small bowl, mix together the 1/3 cup butter, 2/3 cup flour, 1 cup brown sugar, and cinnamon to make a topping, set aside. 

4. In another bowl cream 3/4 cup butter and 3/4 cup sugar until light and fluffy.

5. Add eggs and mix well.

6. Stir in sour cream and vanilla.

7. Combine dry ingredients and add to the batter, blend well.

8. Spread 2/3 of the batter in the bottom of the springform pan.

9. Top with berries.

10. Spread remaining batter over berries.

11. Sprinkle batter with the topping you set aside.

12. Bake at 350° for 1 hour or until tester comes out clean.

 

Great served warm with ice cream.
