Saskatoon Berry Coffeecake

cup vegetable oil

cup flour

cup brown sugar

cup butter

teaspoon cinnamon
Instructions
1. Heat oven to 350°.
2. For topping: in a small bowl mix together 1/3c flour, 1/3c brown sugar, cinnamon and 1/4 c butter until crumbly. Set aside.
3. In one bowl mix together 2 c flour, 1/2 c sugar, 3 tsp baking powder, and salt.
4. In another bowl beat eggs until frothy.
5. Mix in oil and milk; mix well.
6. Pour egg mixture into dry ingredients and mix together.
7. Fold in saskatoon berries and rind from 1 lemon.
8. Pour batter into a greased 9" tube pan.
9. Sprinkle topping that you set aside over batter.
10. Bake at 350° for 50 to 60 minutes or until the cake begins to shrink away from the sides of the pan.
11. Cool about 30 minutes before inverting pan to remove cake. Turn right side up on plate for serving.
