Saskatoon Berry Cornbread Dinner Ring

package corn muffin mix

tablespoon white sugar

cup saskatoons

4

cups hot creamed leftover chicken or ham

 

Instructions

1. Reserve 1/4 cup saskatoons, mix remaining saskatoons with sugar and mix into the dry corn muffin mix.

2. Then prepare the batter according to package instructions.

3. Stir only until moistened.

4. Pour batter into well greased 6 cup ring mold.

5. Bake in 425° oven for 25-30 minutes.

6. Turn onto a warm serving platter and fill center with hot creamed chicken or ham.

7. Garnish with reserved 1/4 c of saskatoons.

Yield: 8 servings
