Saskatoon Berry Crepes with Sauce

cup milk

large eggs

tablespoon brandy

cup flour

teaspoon butter

cups saskatoons


3/4

cup orange juice


1/2

cup white sugar


4

ounces cream cheese

cup banana


1

cup saskatoons


1/4

cup brown sugar

 

Instructions

Crepe batter:

1. Combine milk, eggs. brandy, and flour in a blender until smooth. Let rest at room temperature for a least 1 hour or refrigerate overnight.

2. Place crepe pan over medium heat, when hot, add 1/4 tsp butter to coat surface.  Stir batter and pour about 2 tbsp in pan, quickly tilting pan to coat entire surface.

3. When bubbles form on crepe surface, turn crepe to cook the other side.

4. Cool crepes and stack for future use.

 

Saskatoon sauce:

1. For sauce: puree 4 cups saskatoons in food processor. 

2. Combine with orange juice and white sugar in a saucepan.  Cook and simmer until sauce reaches desired consistency. Set aside and keep warm.

 

To make Crepes:

1. For each crepe combine 1 tbsp cream cheese, 1\8 c bananas, and 1/8 c saskatoons. Sprinkle with a little brown sugar.

2. Roll crepes and heat both side on a griddle.

3. Serve with saskatoon sauce spooned over the top.

Makes about 8 crepes.
