Saskatoon Berry Crumb Cake

cup brown sugar

cup flour

teaspoon cinnamon

cup butter or margarine

cups flour

teaspoon baking powder

cup white sugar

1/2

teaspoon salt

large eggs

cup vegetable oil

1/2

cup milk

1

teaspoon almond flavouring

cups saskatoons

 

Instructions

1. Line bottom and sides of 8" square glass baking dish with waxed paper.

2. In small bowl combine 1/4 c white sugar, 1/4 c brown sugar, 1/2 c flour, 1/2 tsp cinnamon, and 1/4 c butter. Blend with fork or fingers until mixture resembles coarse meal. Set aside.

3. In large bowl sift flour, sugar, baking powder, and salt. Resift two more times and set aside.

4. In medium bowl beat eggs, oil, milk, and almond extract until well mixed.

5. Make a well in the dry ingredients and stir in egg mixture. Gently fold in saskatoons and pour batter into prepared dish.

7. Microwave uncovered at high for 9 minutes (or until a wooden pick inserted in the center comes out clean) Rotate cake twice during baking.

8. Cool and cut into squares.
