Saskatoon Berry Cupcakes

cups saskatoons

2

cups flour

3

teaspoons baking powder

1

teaspoon salt

1/2

cup butter or margarine

1 1/2

cups white sugar

3

large eggs

1/2

teaspoon cinnamon

1/2

cup milk

 

Instructions

1. Place baking cups in muffin tins.

2. Toss saskatoons with 1/4 c flour until coated. Mix remaining flour, baking powder, and salt in bowl.

3. Cream butter, sugar, egg, and cinnamon in bowl with electric mixer until light and fluffy.

4. Add milk and flour alternately , about 1/3 at a time, beating on low speed until mixed.

5. Gently fold in saskatoons. Spoon batter into baking cups. Bake at 350°F for 20-25 minutes or until cupcakes are golden brown.

Cool 10 minutes in pan.  At serving time sprinkle with icing sugar.
