Saskatoon Berry Gingerbread

cups saskatoons

1/2

cup butter or margarine

1/2

cup brown sugar, packed

1

cup molasses

1

large egg

2 1/2

cups flour

1

teaspoon baking soda

1/2

teaspoon salt

1

teaspoon ginger

1/2

teaspoon cloves

1

teaspoon cinnamon

1

cup water, hot

 

Instructions

1.Cream butter, add sugar and molasses.  Beat until light.  Add egg and beat well.

2. Sift dry ingredients together and use a small amount to coat the berries.

3. Add remaining dry ingredients to butter mixture alternately with the hot water, beating until smooth.  Fold in floured saskatoons.

4. Bake in greased and floured 13x9" pan at 350°F for about 35 minutes.

5. Serve hot or cold.
