Saskatoon Berry Pound Cake

Instructions 1. Cream butter until fluffy, beat in sugar until mixture is light and fluffy. About 5 to 8 minutes. 2. Add eggs one at a time, beating well after each addition. 3. Combine flour, baking soda, and salt. Mix in the berries. 4. In a separate bowl mix together the yogurt, good quality orange juice, and rind. Mix well. 5. Mix 1/3 of the dry ingredients into the batter. 6. Add 1/2 of the yogurt mixture. 7. Add another 1/3 of dry mixture, the remaining yogurt, then remaining 1/3 dry ingredients. 8. Pour into a well greased 9 or 10" tube or bundt pan. Smooth top lightly and tap pan gently to remove any air bubbles. 9. Bake at 350° for 60 to 70 minutes or until cake tester comes out clean and the cake is well risen. 10. Let the cake cool for 15 minutes on a wire rack. 11. Turn out the cake and cool. Dust with icing sugar or drizzle with orange glaze. Orange Glaze: 1/2 cup icing sugar 3 1/2 tsp orange juice 1 tsp orange zest (grated rind)
