Saskatoon Coffee Cake

cup butter or margarine, softened

1/2

cup white sugar

egg

1/4

cup milk

2

cups flour

2 1/2

teaspoons baking powder

1/4

teaspoon salt

1

teaspoon cinnamon

1/2

teaspoon vanilla extract

1 1/2

cups saskatoons

2

teaspoons white sugar

1/4

teaspoon nutmeg

 

Instructions

1. Preheat oven to 350° F.

2. Grease 8" square baking pan.

3. In medium size bowl, mix together the butter, 1/2c sugar, and egg until well blended.   Add milk. Stir in flour, baking powder, salt, cinnamon, and vanilla. Mix well. Fold in saskatoons until they are just coated.

4. Spread the batter evenly in pan and bake for 35-40 minutes, or until a toothpick comes out clean when inserted.

5. Mix together the 2 tsp sugar & nutmeg and dust over the top of cake while still warm.
