Saskatoon Jelly Roll

teaspoon baking powder

teaspoon salt

large eggs

cup white sugar

teaspoon vanilla extract

cup icing sugar

package cream cheese

tablespoons butter, softened

cup icing sugar

teaspoon vanilla extract

Instructions

1. Sift together flour, baking powder, and salt, set aside.

2. Beat eggs on highest speed of mixer until thick and lemon coloured.

3. Add sugar a little at a time, beating well after each addition.

4. Beat until thick and fluffy.

5. Add vanilla.

6. Gradually fold in flour mixture until smooth.

7. Line a jelly roll pan with parchment paper but don't grease sides.

8. Spread batter evenly in prepared pan.

9. Bake at 400° for 8 to 10 minutes until cake springs back when gently touched in center.

10. Loosen sides by running a knife around edges of pan.

11. Sprinkle jelly roll with icing sugar and cover with a clean tea towel and then cover tea towel with another cookie sheet and flip over.

Remove jelly roll pan and remove parchment paper and sprinkle this side with icing sugar also. Roll up jelly roll in the tea towel gently starting at the narrow end and set aside to cool for 20 minutes. Make sure that the loose end of the jelly roll is on  the bottom.

12. With electric mixer beat the cream cheese, softened butter, icing sugar, and vanilla to make the filling.

13. Unroll the cake gently and spread the filling mixture on cake. Sprinkle with the saskatoon berries.

14. Roll cake again without the tea towel.

15. Dust with icing sugar, cover and refrigerate.
