Saskatoon Lemon Ice Cream

cup saskatoons |

large egg yolks |

can sweetened condensed milk |

tablespoon lemon peel, grated |

cups heavy whipping cream |
Instructions 1. In a blender container, puree saskatoons until smooth and set aside. 2. In a large bowl, beat egg yolks, stir in sweetened condensed milk and lemon rind. 3. Whip cream and fold into mixture. 4. Add saskatoons, and gently swirl with a knife or spatula. 5. Pour into foil lined 9X5" loaf pan or other 2 quart container and cover. 6. Freeze for 6 hours until firm. 7. Remove ice cream from pan, peel off foil and slice. Yield: 1 1/2 quarts
