Saskatoon Lemon Muffins

cups flour

tablespoon baking powder

teaspoon salt

1/2

teaspoon cinnamon

large egg

1 1/4

cups milk

1/3

cup vegetable oil

1/3

cup honey

2

teaspoons grated lemon rind

2

cups saskatoons

2/3

cup icing sugar

1

teaspoon grated lemon rind

3 1/2

teaspoons lemon juice

 

Instructions

1. Combine first 4 ingredients.

2. Beat egg, milk, oil, honey, and lemon zest in large bowl.

3. Add dry ingredients and stir until just moistened.

4. Fold in saskatoons.

5. Spoon batter into 12 parchment or paper lined muffin tins.

6. Bake at 400° for 20 to 25 minutes or until top springs back when lightly touched.

 

Optional Glaze: Combine icing sugar, lemon zest, and enough lemon juice to make a smooth spreadable consistency. Spread on warm muffins.
