Saskatoon Meringue Pie

cup saskatoons

tablespoons grated lemon rind

tablespoons cornstarch

cup white sugar

large egg yolks

tablespoons lemon juice

tablespoons butter

large egg whites

tablespoons white sugar

 

Instructions

1. Combine water, saskatoons, lemon rind, sugar, and cornstarch in a heavy saucepan.

2. Crush some of the berries to release the juice and cook over low heat until mixture is thick and clear.

3. Add a tablespoon of hot mixture to beaten egg yolk, stir well. Then add egg yolks to saucepan stirring continuously and continue cooking and stirring for 5 minutes.

4. Remove from heat, add lemon juice and butter. Cool.

5. To make meringue, beat egg whites until frothy, slowly add sugar, beating until sugar is dissolved and meringue will stand in stiff peaks.

6. Pour cooled mixture into cooled pie shell and top with meringue. Spread meringue evenly on pie filling making sure that it touches the crust on all edges, so that it does not shrink.

7. Bake at 350° for 15 minutes  or until evenly browned, watch carefully.
