Saskatoon Onion Sauce

cup onion, finely chopped

tablespoon butter


1

tablespoon cornstarch


1

cup chicken broth


2

cups saskatoons, cooked & crushed

teaspoon cayenne pepper

teaspoons lemon juice


1/4

cup brown sugar, firmly packed

 

Instructions

1. In a large saucepan saute onions in butter until golden, stirring frequently.

2. Blend cornstarch and 1/4 cup broth, stir into saucepan along with remaining broth and saskatoons.

3. Bring to a boil, simmer 3 to 4 minutes.

4. Stir in pepper and lemon juice.

 

Serve with fish or poultry.

 

Yield: 2 cups
