Saskatoon Pie

cups saskatoons

cup water


1

cup white sugar


1/3

teaspoon salt

teaspoons lemon juice


1/2

teaspoon almond flavouring

tablespoons cornstarch


1/3

cup water

 

Instructions

1. Mix berries with 1 cup of water and cook for 15 minutes.

2. Add sugar and cook for 15 minutes more.

3. Add salt, lemon juice, and almond flavouring.

4. Mix cornstarch in 1/3 cup cold water and add to berries to thicken.

5. Pour mixture into unbaked pie shell and cover with lattice top.

6. Mix 1 egg yolk with 2 teaspoons cold water and brush on pastry.

7. Bake at 400° for 10 min.

8. Reduce heat to 350° for 30 minutes.
