Saskatoon Potato Pancakes

tablespoons flour

teaspoon salt


1/4

teaspoon baking powder

large eggs, beaten

whole potatoes, peeled & grated

cup saskatoons

 

Instructions

1. In a medium bowl mix flour, salt and baking powder.

2. Add beaten eggs.

3. Drain excess liquid from grated raw potatoes and add to egg mixture.

4. Mix well and fold in saskatoons.

5. Drop batter by heaping tablespoons onto hot greased skillet.

6. Fry over medium heat on both sides until golden and the edges are crisp.

7. Serve plain or with warm saskatoon sauce.
