Saskatoon Roll Kuchen

1 cup cream
2 large eggs
2 cups flour
2 tsp baking powder
1 tsp salt

Saskatoon berries


1. Mix cream and eggs.

2. Cut in dry ingredients and mix well, adding more flour as needed to make a soft dough.

3. Roll out and cut into squares. Then put Saskatoon berries in the middle of the square and add a teaspoon, or less of sugar with care to ensure that there is no sugar near the edge.

4. Moisten the edge and fold over berries and stick shut. Ensure that they are sealed.

5. Deep fry until golden. Serve warm.

The secret is to keep the sugar off the edge so that you get a good seal. You can use less sugar as the berries are already quite sweet.
