Saskatoon Tapioca Pudding

tablespoons minit tapioca

1/3

cup brown sugar, firmly packed

1/4

teaspoon salt

large eggs, separated

2 1/2

cups milk

1

teaspoon vanilla extract

1/2

teaspoon lemon peel, grated

4

tablespoons white sugar

2

cups saskatoons

 

Instructions

1. Blend the tapioca, sugar, and salt together well in a saucepan.

2. Beat egg yolks with the milk.

3. Gradually stir this mixture into the tapioca.

4. Cook, stirring constantly, until mixture starts to boil.

5. Remove from heat and cool.

6. Stir in vanilla and lemon rind.

7. Beat egg whites until stiff, gradually beat in sugar.

8. Fold egg whites into tapioca mixture.

9. Gently fold in saskatoons. Chill.
