Saskatoon Tarts

cups saskatoons, divided


3/4

cup white sugar


1

tablespoon cornstarch


2/3

cup water


1

teaspoon lemon juice


6

puff pastry shells, baked

 

Instructions

1. In a 1 quart microwavable bowl, toss 1 cup saskatoons with sugar and cornstarch until well combined. Stir in water.

2. Microwave on high for 3 minutes. Stir well crushing berries.

3. Microwave for 3 more minutes, stir well.

4. Microwave 2 more minutes until thickened.

5. Stir in lemon juice and remaining 2 cups of saskatoons.

6. Cover and chill if desired.

7. To serve divide between the 6 pastry shells and garnish with whip cream or ice cream if desired.
