Saskatoon Vinegar

Instructions 1. In a non-corrosive pan, bring vinegar to a low simmer. 2. Place the cinnamon stick and saskatoons in a 5 to 6 cup jar that has a lid. 3. Pour the vinegar over the berries, add the honey and cool. 4. Cover the jar with the lid and store in a cool place. 5. The vinegar should be ready to use in about 2 days or when it reaches a darker colour. 6. Strain the vinegar as used but do not discard the berries. Leave them in the jar to distill more flavour to the remaining vinegar. Yield: 5 cups
