Apricot Saskatoon Biscuits

cups Saskatoons

2 1/4

cups Bisquick baking mix

2/3

cup milk

2

tablespoons white sugar

1

teaspoon cinnamon

1/2

cup apricot jam

 


Instructions


1. In a large bowl combine baking mix, sugar, milk, cinnamon, and Saskatoons. Stir just until soft dough forms.


2. Turn dough onto a floured surface and knead 5 times. Roll out ½" thick and cut with a 3" cookie cutter.


3. Place on a parchment covered cookie sheet. Gently re-roll leftover scraps and place on cookie sheet also.


4. Bake at 450°F for 8 - 10 minutes or until golden brown.


5. To serve: slice biscuits horizontally in halves, spread with apricot jam, cover with tops.

 


May be served with whipped cream and extra Saskatoons.
