Banana and Saskatoon Nut Bread

cup Saskatoons

1 1/2

cups flour

2/3

cup white sugar

2 1/4

teaspoons baking powder

1/2

teaspoon salt

1/2

cup Rolled Oats, instant

2

large eggs, beaten

1/3

cup butter, melted

1

cup banana, mashed

1

cup walnuts, chopped

 


Instructions


1. Sprinkle 2 tablespoons flour over Saskatoons.


2. Sift remaining flour with the sugar, baking powder and salt.


3. Stir in the oats.


4. Blend eggs, butter, and banana.


5. Combine wet and dry ingredients and stir in nuts.


6. Fold in Saskatoons.


7. Pour into a greased and floured loaf pan and bake at 350° for 1 hour.


8. Let cool 10 minutes, remove from pan to rack.


9. Cool before slicing.
