Black Currant Cordial

2 cups black currants

1 cup sugar

1 cup water

juice and rind of 1 lemon

1. Simmer the black currants, sugar and water for 5 minutes.

2. Add the juice and rind of the lemon (use a potato peeler for the rind)

and simmer for another 5minutes.

3. Sieve the mixture and store in a sterilized bottle and keep in the fridge.

 

The cordial is excellent made up with sparkling water, 7-up, white wine, and also makes a good sauce for vanilla ice cream and lemon cheesecake. When I was in Ireland they served this in Guinness for the ladies!
