cup whole wheat flour

teaspoons baking powder

teaspoon baking soda

1/4

teaspoon salt

1 1/4

cups all-bran cereal

1

cup buttermilk

1

egg

tablespoons vegetable oil

1/2

cup brown sugar, firmly packed

1

cup saskatoons, fresh or frozen

 

Instructions

1. Stir together flours, baking powder, soda, and salt. Set aside.

2. In large bowl, stir together cereal and buttermilk. Let stand 3 minutes or until cereal is softened.

3. Add egg, oil, and sugar. Beat well.

4. Add flour mixture, stirring until just combined. Fold in saskatoon berries. Spoon into lightly greased or paper lined muffin cups.

5. Bake at 400° oven for 20 minutes or until tops spring back when lightly touched.

Yield: 10 muffins
