Chicken And Saskatoon Pasta Salad

cups spiral pasta

cups chicken, cooked & chopped

cup celery, sliced

cup saskatoons


1

cup pea pod, trimmed & cut in half


1/2

cup red bell pepper, chopped


1/4

cup red wine vinegar

tablespoons basil, fresh


1/2

cup Parmesan cheese, grated


1

cup Red wine vinegar dressing


1/4

cup red onion, finely chopped

 

Instructions

1. Cook chicken and cut into cubes.

2. Slice celery.

3. Chop red pepper and red onion, and fresh basil.

5. Mix chicken, celery, pepper, onion, basil, saskatoons, red wine vinegar (not dressing) together in a bowl and put aside.

6. Trim pea pods and cut in half.

7. Cook pasta according to directions on the package, don't overcook. One minute before it is cooked, add halved pea pods along with ingredients in the bowl that you put aside, except Parmesan cheese and red wine dressing.

8. Toss with 1/2 cup of the Red Wine Vinegar Dressing.

9. Cover and refrigerate for several hours or overnight to blend flavours.

10. Before serving toss with remaining 1/2 cup dressing and Parmesan cheese.

 

Yield: 12 (1 cup) servings
