Deep Dish Saskatoon Pie

cups saskatoons

1 1/2

cups white sugar

1/2

cup flour

1

whole lemon peel, grated

tablespoons butter

2

cups Bisquick baking mix

1/4

cup white sugar

1/2

teaspoon cinnamon

1/2

cup water

 

Instructions


1. Combine saskatoons, 1 1/2 c sugar, flour, and lemon rind. Pour  into a 10X6X2" glass baking dish. Dot top with butter.


2. Combine biscuit mix, 1/4 c sugar, cinnamon, and water. mix well to make a soft dough. Knead a few times on a lightly floured board until dough is smooth.


3. Roll out dough to a 11" by 7" oblong. Place crust over berries with a 1/2" overhang and press against the dish.


4. Brush entire top of crust with milk and sprinkle with sugar. Place dish on a piece of tin foil that is a little bigger than dish in case it bubbles over.


5. Bake at 425° for 45 to 50 minutes or until filling is bubbly and crust is golden brown.
