cups saskatoon berry filling

1/2

cup powdered pectin

1 3/4

cups white sugar

1/4

cup corn syrup, light

1

whole grated lemon rind

1/2

cup lemon juice

 

Instructions

1. Puree saskatoons in blender.

2. Mix pectin with 1/4 cup of sugar.

3. Stir in pureed saskatoons.

4. Beat mixture with electric mixer at low speed for 7 minutes.

5. Add remaining ingredients and continue beating for 3 minutes.

6. Pour into freezer containers.

7. Cover and let stand at room temperature for 24 hours and then store in the freezer.

8. Thaw  as needed, refrigerate after thawing. Can be kept in the refrigerator for 1 month.

 

Yield: 4 cups
