Fresh Saskatoon and Strawberry Pie

cups strawberries, fresh

cups saskatoons, fresh

prebaked pie shell


1

cup strawberries, crushed


1

cup white sugar

tablespoons cornstarch


1/2

cup water

tablespoon lemon juice

 

Instructions



Pastry Shell:


Glaze baked pastry shell so it doesn't get soggy from fresh fruit by brushing it while still hot from the oven with a mixture of 2 tsp sugar and 1 tsp hot water.

 

Strawberry Glaze:


Mix together 1 cup sugar, 3 tablespoons cornstarch add 1 cup crushed strawberries and 1/2 cup water. Cook, stirring constantly until thick. Blend in 1 tablespoon lemon juice. Cover and cool to lukewarm.

 

For Pie:


Combine 3 cups strawberries and 2 cups saskatoon berries. Fold in 1 recipe of strawberry glaze.

Pile high in baked pie crust and top with whip cream or Cool Whip.
