Grandma's Saskatoon Soup

envelope unflavoured gelatin

1/2

cup white sugar

2 1/2

cups water

2

tablespoons lemon juice

2

cups saskatoons

1/2

teaspoon cinnamon

1

cup half & half

 

 

Instructions

1. In medium saucepan mix gelatin with sugar, blend in 1 cup water.

2. Let stand for 1 minute.

3. Stir over low heat until gelatin is completely dissolved, about 5 minutes.

4. Stir in remaining water, lemon juice, saskatoons and cinnamon.

5. Simmer, stirring frequently and crushing saskatoons for 15 minutes or until saskatoons are tender.

6. Cool completely, stir in cream.

7. Chill 4 hours or overnight.

8. Garnish with lemon slices and additional saskatoons.

 

Note: Soup will thicken upon chilling.
