Hot Apple Saskatoon Compote

large apples, peeled & chopped in 1" pieces

1 1/2

cups saskatoons, mashed

1

stick cinnamon, broken up

2/3

cup water

1

tablespoon lemon juice

1

tablespoon walnuts, chopped

2

tablespoons orange juice

 

Instructions

1. Break cinnamon stick into 3 pieces.

2. Put apples, mashed saskatoons, cinnamon, water and lemon juice in a saucepan.

3. Cook until apples are tender (10 minutes).

4. Drain, discard cinnamon stick pieces.

5. Add orange juice or brandy, rum or bourbon to saucepan and simmer until liquid is reduced by half.

6. Puree 1 1/2 cups of mixture in a blender and pour over remaining fruit and sprinkle with walnuts.

 

This may be served hot or cold. Compote can be topped with whipped cream or served on cake or ice cream or even porridge.
