Iced Saskatoon Berry Cake

cup butter

cup white sugar

large eggs


1/2

cup milk


1

teaspoon vanilla extract


2

cups flour


2

teaspoons baking powder


3

cups saskatoons

 

Instructions

1. Combine sugar and butter, cream until light and fluffy.

2. Beat in eggs, milk, and vanilla.

3. Combine flour and baking powder.

4. Beat flour mixture into egg mixture, beat well.

5. Fold in saskatoon berries.

6. Bake in a greased 9" square pan for 30 to 35 minutes or until cake tester comes out clean in center.

 

Lemon icing:

1 cup sifted icing sugar

1 TBSP milk

2 tsp lemon extract or lemon juice and zest.

 

Cover cooled cake with icing.
