Lemony Saskatoon Muffins

cup white sugar

cup saskatoons

large egg

1/4

cup vegetable oil

3/4

cup milk

tablespoon lemon peel, finely grated

tablespoons white sugar

 

Instructions

1. Sift together in bowl, flour, sugar, baking powder, and salt.

2. Stir in saskatoons.

3. In separate bowl beat egg, oil, and milk. Add to dry ingredients. Mix only until well moistened.

4. Spoon batter into greased or paper lined muffin tins to 3/4 full.

5. Top each muffin with the sugar and lemon zest mixture.

6. Bake in a 425° oven for 15 minutes or until nicely browned.
