Low-Fat Saskatoon Pancakes

cups flour


1/2

cup white sugar

teaspoons baking powder


1/4

teaspoon salt


1/4

teaspoon nutmeg

cup saskatoons


2

cups skim milk, room temperature


2

large egg whites, whipped


1

tablespoon applesauce, room temperature

 

Instructions

1. Prepare skillet with cooking spray and heat on medium heat until hot.

2. In mixing bowl, combine flour, sugar, salt, baking powder, nutmeg, and saskatoons.

3. In another bowl whip egg whites and then add milk and applesauce.

4. Mix dry ingredients with wet ingredients, stir just until moistened.

5. Cook pancakes for 2 minutes on each side.
