Melt Your Heart Saskatoon Muffins

cup rolled oats

cup buttermilk

cup flour


1/2

teaspoon salt


1

large egg, beaten


3/4

cup brown sugar, firmly packed


1/2

teaspoon baking powder


1/2

teaspoon baking soda


1/4

cup butter, melted


1

cup saskatoons, fresh or frozen


1/3

cup brown sugar

 

Instructions

1. Heat oven to 400°F.

2. Grease or spray muffin tins, if needed.

3. Combine oats and buttermilk in small bowl and let stand.

4. Combine dry ingredients.

5. Add beaten egg and butter to oat mixture.

6. Mix well and add oat mixture to dry ingredients, all at once.

7. Stir just until moistened. gently fold in saskatoon berries.

8. Fill muffin cups 3/4 full. Sprinkle tops with remaining brown sugar.

9. Bake at 400° for 15 to 22 minutes.
