Orange Gooseberry Jam

4 cups gooseberries

grated rind of 1 orange

1/2 cup orange juice

3 cups sugar

1. Top and tail the gooseberries.

2. Cook gooseberries and orange gently until the fruit is soft, then boil for

10 minutes.

3. Add the sugar and stir until dissolved.

4. Bring to a boil and boil hard until setting point is reached, stirring constantly.

Test after 5 - 10 minutes.

5. Seal in sterilized jars.

Setting Point:

Remove the pan from the heat and put a spoonful on a saucer that has been in the freezer. Allow to cool, then push a finger across the surface.

If the surface wrinkles setting point has been reached. If not, boil for a few minutes longer.
