teaspoon nutmeg

cup white sugar

teaspoon baking soda

teaspoon salt

cup pecans, chopped

large eggs, slightly beaten

tablespoons milk


3/4

cup orange juice, freshly squeezed

teaspoons orange zest


1/2

cup butter

cups saskatoons

 

 

Instructions

1. Lightly grease and flour a 4 X 8" loaf pan.

2. Sift together flour, baking powder, baking soda, salt, nutmeg and sugar in a large bowl, add pecans.

3. Beat eggs with milk, orange juice, and zest in a separate bowl.

4. Blend in butter.

5. Pour liquid ingredients into dry, stirring until just barely moistened.

6. Fold in saskatoon berries.

7. Spread batter into prepared pan, and bake at 350° until golden brown and cake tester comes out clean. 50 to 60 minutes.
