Peach Saskatoon Pound Cake

cup butter

cup milk

1 1/2

pounds peaches

large eggs, room temperature

1 1/4

cups white sugar

2

teaspoons baking powder

1/4

teaspoon salt

2 1/2

cups flour

2

cups saskatoons

 

Instructions

1. Heat oven to 350°F, and lightly grease a 10" tube pan.

2. Heat butter and milk until butter melts.

3. Peel, half and pit peaches, then cut into 1/2" pieces.

4. Beat eggs and eggs with mixer until pale and thick, about 5 minutes.

5. Beat in baking powder and salt.

6. Add flour alternately with the warm butter mixture.

7. Fold in peaches and saskatoons just until blended.

8. Pour into tube pan.

9. Bake for 1 hour and 10 minutes at 350°.

10. Let cake cool completely in pan.

11. Run a thin knife around the edge of pan and tube. Invert cake onto rack and then place topside up on serving plate.

 

Can be drizzled with a lemon glaze:

1/2 cup icing sugar

3 1/2 tsp lemon juice

1 tsp lemon zest
