cup saskatoons, mashed |

cup raspberry fruit syrup |

Instructions 1. Bring water to a boil in a deep saucepan and add rice. Boil rapidly uncovered for 15 - 20 minutes. Drain rice, reserving liquid. 2. Put saskatoons in a bowl and mash. Add raspberry syrup and lemon juice. 3. Return rice water to saucepan and add chopped apple and cinnamon stick. Cook over medium heat for 5 minutes until apple is tender. 4. Remove the cinnamon stick. Add the drained rice and saskatoon mixture. 5. Simmer for 5 minutes. 6. Blend together cold water and cornstarch to form a smooth paste. Stir into soup. 7. Bring to boiling, continue to cook for 3-5 minutes. Cool slightly. Serve soup warm or cold. If serving cold garnish with whip cream.
