Raspberry-Saskatoon Swirl Soup

cups saskatoons

ounces raspberries, thawed

1/2

cup buttermilk

1/2

cup yogurt, plain, no fat

1/2

cup yogurt, vanilla, no fat

 

Instructions

1. Process 1 cup of the saskatoons in the blender until smooth, and pour through a strainer to remove seeds and skins.

2. Add buttermilk and plain yogurt to saskatoon mixture, stirring well to mix. Refrigerate.

3. Drain raspberries and put through a strainer, discard seeds.

4. Stir in vanilla yogurt and refrigerate.

5. To serve soup, divide saskatoon mixture between 2 bowls and carefully add 1/2 of the raspberry mixture in each bowl. Swirl with the tip of a knife. Garnish with the 1/4 cup of remaining saskatoon berries.
