Rhubarb Cake

Rhubarb Cake
 1/2 cup butter or margarine
1 1/2 cups white sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
3 cups chopped rhubarb
1 TBSP flour
1/4 cup butter
2 tsp cinnamon
1 cup brown sugar

1. Blend 1/2 cup butter, white sugar, eggs, and vanilla.

2. Mix flour, BS, and salt together.

3. If you don't have buttermilk you can substitute by putting 1 TBSP lemon juice or vinegar in measuring cup and fill to 1 cup measure with milk.

4. Add 1/2 buttermilk, then 1/2 the flour mixture, then rest of the buttermilk, then rest of the flour beating well between each addition.

5. Add 1 TBSP of flour to rhubarb and stir the rhubarb into the batter.

6. Pour into a greased 9 X 13 baking dish.

7. Combine brown sugar, cinnamon and butter until well mixed.

8. Sprinkle on top of batter. It looks like too much but it isn't.

Bake at 350 degrees for 40 minutes
