Rhubarb Cookies

1 cup butter
1 1/2 cups brown sugar
2 eggs
3 cups flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups fresh rhubarb, finely chopped
3/4 cup coconut, shredded

Makes 6 dozen cookies


Preheat oven to 350F
Turn convection off, if using a convection oven

Mix together butter, brown sugar and eggs.
Add flour mixture of flour, baking soda, and salt, stirred together.

Stir sugar mix into butter until well combined.
Stir in rhubarb and coconut.

Spray Pam onto non-stick cookie pans and place medium sized scoops onto the pans. Do not press down.

Place cookies on middle rack, reduce temperature to 325F.
Cook for 10 - 15 minutes, until cookies have browned on bottom.
