Rhubarb Crabapple Saskatoon Jam

cups rhubarb, chopped

2

cups crabapple juice

2

cups saskatoons, mashed

7

cups white sugar, mashed

 

Instructions

1. Place rhubarb and 1/2 cup crabapple juice in a large saucepan and bring to a boil.

2. Simmer until soft.

3. Measure pulp and add sufficient crabapple juice to bring the mixture to 5 cups.

4. Add 2 cups of the mashed saskatoon berries.

5. Heat the mixture to the boiling point, add sugar, stirring all the while.

6. Boil until thick, 5 to 7 minutes.

7. Pour carefully into sterilized jars, leaving 1/2" head space. Seal.

8. Process for 15 minutes. Label and store in a cool place or freeze in jars.
