Saskaberry Muffins

cup white sugar

teaspoons baking powder

teaspoon salt

cup saskatoons, fresh or frozen

3/4

cup milk

1

large egg

1/3

cup butter, melted

 

Instructions

1. In a large bowl combine flour, sugar, baking powder, and salt.

2. Stir in saskatoon berries.

3. Combine milk, beaten egg, and melted butter, and add to dry ingredients.

4. Stir until just moistened, batter will be lumpy: do not over mix.

5. Spoon batter into 12 greased or paper lined muffin cups.

6. Bake at 400°F for 25 minutes, until tops spring back when lightly touched.
