Saskatoon Apple Stuffed Pork Loin

Approx. 4 pound pork loin 
1/4 cup celery - chopped
1 Apple - chopped
2 carrots - peeled and grated
1 1/2 cups saskatoon berries
2 cups bread cubed
1 box stove top chicken stuffing
1 cup chicken stock
1 egg
salt & pepper
Pepper, salt, sage, thyme, and rosemary
parsley

1. Separate half of pork loin, or if in one piece cut down 

the middle - lengthwise.

2. Cover with Saran Wrap and tenderize with a meat tenderizer 

(I have a metal hammer like thingy) Flatten to around 3/4"

3. Sauté onion, celery, carrot, Apple, parsley, and spices; 

sage, thyme, pepper and any other spice you would like.

4. Add bread cubes, Saskatoon berries, box of stove top stuffing, chicken 

stock, and beaten egg.

3. Remove Saran Wrap and spread stuffing over half of the loin 

to about 1" from edges.

4. Cover with other loin piece and wrap several times with 

butcher string.

5. Secure ends with skewers, string or toothpicks.

6. Sprinkle with rosemary, thyme and pepper.

7. Sear roast then put in oven at 350 degrees and bake for 

1 1/2 to 2 hours or until thermometer reads 160 degrees.
