Saskatoon Banana Lemon Loaves

cups bananas, mashed

tablespoons grated lemon rind, mashed

cup lemon juice

1/3

cup butter, softened

1/3

cup shortening

1

cup white sugar

large eggs

cups flour

2

teaspoons baking soda

1 1/2

teaspoons baking powder

1 1/2

teaspoons nutmeg

3/4

teaspoon salt

3 1/2

cups saskatoons

 

Instructions

1. Combine bananas with lemon rind and juice and set aside.

2. In large bowl beat together butter, shortening, and sugar until light and fluffy.

2. Beat in eggs, one at a time, beating well after each addition.

3. Stir in banana mixture and vanilla.

4. Sift together flour, baking soda, baking powder, salt, and nutmeg.

5. Stir in saskatoons.

6. Stir dry ingredients into batter 1/3 at a time.

7. Spoon into 5 small greased 5 3/4 X 3 1/4 foil pans or 3 regular greased 8 1/4 X 4 1/4 loaf pans.

8. Bake in 350° oven for about 40 minutes until golden and cake tester comes out clean. Larger loaf pans may need a little more time.

9. Let cool in pans on racks for 15 minutes. Remove from pans and cool completly on racks. Store in fridge for up to 3 days or freeze.
