Saskatoon Berry Bread

cups flour

tablespoon baking powder

1

large egg

1

large egg white

3/4

cup white sugar

2

tablespoons margarine, melted

1

cup milk

2

teaspoons grated lemon rind

2

cups Saskatoons

 

Instructions


1. Preheat oven to 350°F, coat a 9 x 5" loaf pan with cooking spray.


2. Combine flour and baking powder, put aside.


3. Beat egg, egg white, sugar, and margarine with an electric mixer until smooth. Add the milk and lemon rind, beat again.


4. Stir the flour and Saskatoons into the batter til just moistened. Pour into loaf pan.


5. Bake for 50-60 minutes or til a toothpick inserted in the center, comes out clean.


6. Cool in pan for 10 minutes then turn out onto wire rack.
