Saskatoon Berry Brunch Pancakes

cups saskatoons


1/4

cup white sugar


1/4

cup butter or margarine


1/2

teaspoon cinnamon

eggs

cup low-fat cottage cheese


1/2

cup flour


2

tablespoons vegetable oil


3/4

teaspoon baking powder


1/2

teaspoon salt


1/2

teaspoon vanilla extract

 

Instructions

1. In large saucepan combine, saskatoons, sugar, butter, and cinnamon.

2. Cook over low heat, stirring until butter is melted and sugar is dissolved. Keep warm.

3. Place remaining ingredients in a blender. Cover and blend on high speed 1 minute.

4. For each pancake pour 1/4 c batter onto hot, lightly greased griddle.

7. Cook on both sides until golden brown.

8. Place 2 tbsp of the saskatoon mixture on 1 side of pancake.  Fold pancake in half over saskatoons.
