Skillet Saskatoon Berry Corn Bread

cups yellow cornmeal

1 1/2

cups flour

teaspoons baking powder

1/2

cup white sugar

2

eggs

1 1/2

cups milk

1/3

cup vegetable oil

3

cups Saskatoons

6

slices bacon, fried and crumbled

 

Instructions


1. Combine cornmeal, flour, baking powder. and sugar.


2. Add eggs, milk, and oil.


3. Beat for 1-2 minutes.


4. Pour batter into a greased 9" skillet.


5. Drop Saskatoons and bacon on top.


6. Bake in a preheated 425° oven for 20-25 minutes.


7. Cut into 8 wedges.


Serve warm with butter.


Yield: 8 servings
