Strawberry Saskatoon Mousse Pie

envelope gelatin, unflavoured


1/4

cup water, cold

tablespoons lemon juice


1

cup saskatoons, finely chopped


1

cup strawberries, finely chopped


3/4

cup icing sugar


8

ounces cool whip


1

graham cracker pie crust

 

Instructions


1. In a small saucepan sprinkle gelatin over cold water, let stand for 1 minute to soften, then cook over low heat, stirring until gelatin is dissolved. Remove from heat.


2. Stir in lemon juice and set aside to cool.


3. In a large bowl add saskatoons, strawberries, and icing sugar, toss to coat.


4. Stir in  cooled dissolved gelatin, fold in whipped topping.


5. Spoon mixture into graham crust.


6. Refrigerate 3-4 hours or until firm.

 

Garnish with berries
